Pierogy Grilled Cheese
Ingredients
Pierogies:
- 1 bag Mrs. T’s Classic Cheddar Pierogies
- 12 yellow onions, sliced
- 4 ounces butter
- 48 slices Hawaiian bread
- 96 slices aged gouda
- 48 slices fresh mozzarella
- Mayonnaise, as needed
Directions
Pierogies:
- Preheat oil to 350°F. Fry pierogies in oil for 4 minutes until nicely browned. Drain and set aside.
- In a skillet over medium heat, melt butter and caramelize onions; set aside.
- Preheat skillet or flat top grill to 350°F. Spread a thin layer of mayonnaise on one side of bread slice, place 2 slices of gouda, 2 slices of mozzarella, 3 pierogies, caramelized onions and 2 slices of gouda on bread.
- Top with a second slice of bread that has a layer of mayonnaise on the outside. Grill until golden brown and cheese has melted.
